About This Drink
Sole is Figlia's second aperitivo and the more immediately approachable of the two. Where Fiore leans into bitter orange and florals, Sole goes in a sunnier direction: Meyer lemon, peach, and sweet basil, with white peppercorn and jasmine adding complexity. The Meyer lemon is the key note here. It's softer and more fragrant than regular lemon, and the juice concentrate gives the base a natural tartness without the sharpness you'd get from citric acid alone. Peach fills out the mid-palate with ripe stone fruit. The basil extract is genuinely present — this has a faintly savoury quality that keeps it from reading as fruit punch — and capsicum and black pepper add a warm, dry heat that surfaces in the finish. Black tea essence in the base provides a subtle tannic structure. Like Fiore, Sole contains no added sugars or preservatives, and the clean ingredients list shows. Serve over ice with soda and a lemon peel. It also works as a base for zero-proof cocktails where you'd want something lighter and more citrus-forward than a Campari-adjacent aperitivo — a spirit-free Aperol Spritz alternative, essentially, if one that's noticeably more complex than that comparison suggests.
