The recipe uses a yeast strain selected to produce minimal alcohol during fermentation naturally, with no dealcoholisation step. A long, cold fermentation develops the crisp lager character, and the beer is dry-hopped with Motueka hops, contributing the citrus notes to the finish. The water is drawn from the brewery's own spring on Bodmin Moor, a sourcing detail that connects the beer closely to its Cornish setting.
