Glimmer Dealcoholized Sparkling Wine is an alcohol-free sparkling wine made entirely from Chardonnay grown in certified organic vineyards in British Columbia, and it takes its cue from the French blanc de blancs style of all-white-grape fizz. Founders Marina and Jane started the project from their own experience: Marina missed celebratory sparkling wine while pregnant, and Jane had found her own reasons for going without alcohol. The wine is made by the Charmat method, where a second fermentation happens in a sealed tank rather than the individual bottle, and the carbonation is set before bottling. It is medium-bodied, with apple and pear flavours and stone fruit and lemon rind on the palate. The bubbles are assertive, the acidity soft, and it closes dry.
