The wine is produced using a fermentation approach designed to generate no alcohol from the outset, rather than removing it from a fully made wine. Sugars are also reduced by around 30% compared to standard fermentation. The grape ferment is enhanced with an infusion of green tea, hand-plucked in the Yunnan province of China. It sits alongside a sparkling blanc in the brand's no-alcohol range.
