Noughty Blanc is an alcohol-free white wine from the Western Cape of South Africa, blending 55% Chenin Blanc with 45% Chardonnay. The grapes were fermented at 14-15°C for 14 days, then left on lees (the dead yeast cells remaining after fermentation) for two months before dealcoholisation using a spinning cone column, a low-temperature method of separating alcohol from the finished wine, performed under vacuum. Dealcoholisation means the wine was made at full strength before the alcohol was removed.
