Noughty Blanc is an alcohol-free white wine made from a blend of Chenin Blanc and Chardonnay grapes harvested from the Western Cape region of South Africa. The wine undergoes 14 days of fermentation at 14-15°C, then rests on lees, the spent yeast sediment, for two months. The alcohol is then removed using spinning cone technology, a process where the wine is spun under vacuum at low temperature. Sulphites are kept below 150mg per litre. The nose carries yellow apple, lime, melon and chamomile. On the palate, honeysuckle, citrus fruit and jasmine come through, with a good balance of acidity and fruitiness.
