Noughty Sparkling Chardonnay is an alcohol-free sparkling wine made from 100% organically grown Chardonnay grapes sourced from sandy and calcareous soils in southern Spain, created by Amanda Thomson. It is a non-vintage wine, meaning grapes from different harvests are blended. Once fermented, the wine is dealcoholised using a spinning cone column under vacuum (the alcohol is removed from the fully fermented wine) while the volatile aromas are captured and returned to the finished product. In the glass it is pale golden with fine bubbles and lightly carbonated. The aroma offers crisp, ripe apple and pear alongside florals and lemon zest. On the palate there is fresh apple, pear, and citrus zest alongside caramel and toast. The finish is clean and refreshing, with a touch of sweetness offset by acidity.
