About This Drink
Oddbird Addiction is an alcohol-free red wine from Ribera del Duero, Spain, made with 100% Tempranillo grapes. Production begins with cold maceration (soaking the skins before fermentation to extract colour and tannin without heat), then native-yeast fermentation in stainless steel at low temperatures, using the yeasts naturally present on the grapes rather than an added strain. The wine matures for twelve months on fine lees (the spent yeast sediment, which adds body and texture), with a short period in oak. Alcohol is then removed through vacuum distillation, a low-temperature process that preserves aromas. On the palate, it is full-bodied, with bold structure and solid, layered tannins. Baked plum, ripe fruit, and a touch of dark cherry sit alongside barn yard, leather, and smoke. Cooking spices, dried herbs, and pepper are also present, with freshness and minerality throughout.
