Pivot Beer Modern Lager is an alcohol-free lager built on a different premise to most beers in the category: the recipe was engineered from the start to reach low ABV without removing alcohol after a conventional brew. Elevated mash temperatures add depth to the grain, specialised yeast strains and fermentation methods build character during fermentation, and bold hops provide a full-bodied finish. The method is intended to generate complexity at the brewing stage rather than compensate for what dealcoholisation removes.
