Ritual's Aperitif Alternative takes on the bitter Italian aperitivo category, drawing on botanical extracts rather than distilled or macerated spirits. The colour is a rich amber-red that carries through visually to the finished cocktail. The nose is orange blossom and fresh citrus, then gentian root and roasted chicory come in with the herbal bitterness you'd expect from this style. On the palate the bittersweet balance works well: citrus brightness, rhubarb tartness, and a warm spiced quality build steadily without any single note overwhelming the others. Stevia contributes sweetness that keeps things in check without adding calories. The finish is long and spiced, carrying herbal and bitter notes cleanly. It's a credible substitute in a Negroni or an Americano, and holds up in a Spritz. The bitterness level is in the right range for Campari-style applications, though the botanical complexity is a step below what you'd get from the original.
