New London Light Midnight Sun is an alcohol-free aperitif distilled at a waterside distillery in Salcombe and blended with kombucha. Distillation uses a rotary vacuum still, a low-temperature process that draws out botanicals without the heat of conventional distillation. Its character comes from wild coastal berries and kelp, inspired by the Nordic region, with seaberries and elderberries sourced by hand. Subtly sweet, it carries elderflower, fresh pine, berry, and herbaceous dill, and is aimed at drinkers who enjoy pink gin.
