The amaretto starts life in Italy, distilled at 28% vol. From there it travels to Grasse, where Sober Spirits extracts the alcohol using perfume-industry techniques at a distillery that has been in operation since 1875. What comes back is the amaretto's flavour profile intact, minus the ethanol. On the nose and palate it is genuinely strong: bitter almonds, toasted hazelnuts, caramelized dried fruit, and a warm marzipan sweetness that lingers. The body is quite thick for something with no sugar. The vegetable glycerin base helps, but the extracts themselves do a lot of the work here. At 49 calories per 100ml, it punches above its weight on flavour. Its aromatic intensity makes it useful beyond cocktails. The brand suggests using it in coffee and pastries, and it holds up well enough to stand on its own over ice. For an Amaretto Sour without the hangover, it is hard to fault.
