About This Drink
Surely's Sparkling Brut positions itself in Champagne territory rather than the sweeter prosecco end of the market, and that's the right call. Non-alcoholic wines tend to read as sweeter than their alcoholic equivalents because alcohol itself carries bitterness and heat that counterbalances residual sugar — without it, you need to go drier to achieve the same overall balance. The Brut uses California white wine as its base, put through Surely's spinning cone column dealcoholisation process. The centrifugal-force method strips alcohol while preserving aromatic compounds, with unfermented varietal grape juice added back to restore volume. Apple, pear, and honey characterise the flavour profile; citrus acidity keeps it from feeling flat. It's the most versatile in the Surely range — works as an aperitif, suits a celebration pour, and holds up reasonably well alongside food. Surely ship primarily in the US, though the Sparkling Brut is available through specialist AF retailers in the UK. The can format (also available) is useful for outdoor occasions. Like all the Surely range, it's low in sugar: the brand markets a 3g sugar per can figure for the canned versions, which is a solid benchmark for a non-alcoholic sparkling wine.
