Wednesday's Domaine Cuvée is an alcohol-free sparkling rosé from the La Mancha region of Central Spain, made from Airen Blanco and Tempranillo. The wine is gently de-alcoholised (fermented to full strength, then the alcohol removed) and held in tank under pressure for a minimum of 24 hours to build its pink effervescence. Raspberry and strawberry aromas carry a trace of floral spice. On the palate, delicate red fruit is balanced by citrus freshness and a gentle acidity. The finish is dry, crisp, and clean, with ginger and no sweetness.
