
Baron de Chanteclerc
Baron de Chanteclerc is an alcohol-free sparkling wine range from Domaine La Colombette, a fourth-generation family estate in Béziers, Languedoc, with over 20 years of work behind its dealcoholisation process.
François Pugibet makes the wines at the estate, which sits at the gates of Béziers facing the Mediterranean. Domaine La Colombette removes the alcohol using reverse osmosis combined with distillation. Reverse osmosis passes the wine through a fine membrane to separate the alcohol from the rest of the liquid; distillation then processes the result further. Fermentation is carried out at low temperatures, and the wines are matured in stainless steel tanks before the dealcoholisation step, meaning the alcohol is removed after fermentation is complete.
The range draws on grape varieties including Souvignier Gris, Muscaris and Grenache. The wines contain sulphites.
