Mitchell founded JumpShip after wanting to drink craft beer whilst sailing without compromising her ability to navigate, a practical origin that shaped the brand's identity from the start. Rather than using dealcoholisation machinery (equipment that strips alcohol from fully fermented beer), JumpShip developed a small-batch brewing process that keeps alcohol naturally low from the beginning of fermentation. The distinction matters: the approach preserves the aromatic and structural qualities that dealcoholisation can sometimes diminish, and it informs every beer across the range.

The range is broad for a specialist producer, spanning lagers, IPAs, stouts, sours, and seasonal ales. In 2023, JumpShip raised £386,150 from 535 investors via crowdfunding to fund construction of a dedicated alcohol-free brewery in Edinburgh, one of the more significant capital raises in the independent AF beer sector. The brand also donates at least 10% of its profits to charitable causes.
