
Vallformosa
Vallformosa is a Cava and still-wine producer founded in 1865 in Vilobí del Penedès, Catalonia, that now includes alcohol-free sparkling wines in its range. Based in the Penedès region, the winery specialises in Cava and still wines, with vineyards in what it calls the "+500 area", at 500 metres above sea level, and it works with more than 400 winegrowing families across the region. The Cava range is built around the traditional varieties Macabeo, Xarel·lo and Parellada, produced using traditional methods.
For its alcohol-free sparkling wines, Vallformosa removes the alcohol by vacuum distillation at low temperature, a process in which the wine is treated under reduced pressure. The production also involves pasteurisation, the addition of sugar as rectified concentrated must, carbonation, and isobaric bottling, in which the wine is sealed under constant pressure.
Vallformosa emphasises sustainability and innovation. The winery consumes 40% less water than the industry average and reuses or recycles 91% of the waste it generates.
The alcohol-free range spans sparkling whites and rosés and reaches sober-curious drinkers through specialist alcohol-free retailers and broader multi-channel distribution.
