Jeff Stevens launched the company after more than two decades of sobriety, motivated by the near-total absence of interesting alcohol-free options in social settings. The brewery produces its range using vacuum distillation, a process that reduces atmospheric pressure inside the vessel to lower the boiling point of alcohol, allowing it to be removed from fully fermented beer at temperatures low enough to preserve the flavour compounds built during fermentation. Removing alcohol from fully fermented beer, rather than brewing to low strength from the start, is the production choice that grounds WellBeing's approach to craft quality in the AF space.

The range spans wheat beers, dark ambers, IPAs, and stouts, with CBD-infused options extending the lineup into functional territory. One product carries a specific positioning as the first AF beer enriched with all-natural electrolytes, placing it clearly within the active-lifestyle market. WellBeing has also collaborated with fellow St. Louis brewer 4 Hands Brewing Co. on an AF IPA, a project that reflects the brand's standing within the local craft community.
