Wiper and True is a Bristol brewery co-founded in 2012 by Michael Wiper and Alexander True, producing alcohol-free beers alongside a full-strength range from two sites in the city.

The story began with home-brew experiments around a newly planted apple orchard: the founders originally set out to make cider before settling on beer, cooking up their first batches on a kitchen hob. They brewed nomadically for a period before opening their first brewery in St Werburghs; a second site in Old Market followed. The business remains independent and family-run, with a team of over fifty.

The alcohol-free beers are produced using reverse osmosis dealcoholisation, a process in which beer is brewed at full strength and the alcohol then removed. The brewery's beers are unfiltered and unpasteurised, and production across both sites uses German-designed kit. Wiper and True operates a closed-loop carbon dioxide system: CO2 released during fermentation is cleaned, stored and returned to the brewing and packaging processes. Spent grain is passed to a local farmer for use as cattle feed.

The brewing programme spans lagers, pale ales, IPAs and stouts, with alcohol-free options across several of these styles. Wiper and True has also partnered with four other UK breweries on a limited-edition collection of alcohol-free beers.

Environmental commitments run through the operation. A 159kW solar array covers the brewery roof, no plastic is used in beer deliveries, and all cardboard is 100% FSC certified. The brewery is targeting Net Zero by 2030 and holds Real Living Wage accreditation. Both taprooms, in St Werburghs and Old Market, are run as inclusive and welcoming spaces.
