About This Drink
Uncharted came out of a collaboration between JumpShip and Pilot Beer, both Edinburgh-based brewers with a similar philosophy about what AF beer should be. The brief was straightforward: a raspberry and vanilla sour that tastes like the actual thing, not a flavoured approximation. To that end they used a traditional mixed culture of yeasts and bacteria for the base fermentation, then added a significant volume of real raspberry juice rather than extracts or concentrates. A touch of vanilla extract goes in too, kept restrained so it plays a supporting role rather than dominating. The result pours an inviting pale pink. The aroma has ripe fruit and the subtle funky character you expect from mixed culture fermentation — a background note of fresh hay that signals something more interesting than a fruit beer. On the palate it's lightly tart and fruit-forward, the vanilla giving the perception of sweetness without the beer actually being sweet. Dry finish. The decision to avoid concentrated flavourings keeps the sugar content low, which is worth noting. A thoughtful beer.
