About This Drink

Apple and elderflower is a well-trodden combination in British soft drinks, but kombucha fermentation changes the dynamic. The apple juice from concentrate provides the body and a gentle orchard sweetness, while the elderflower stays subtle — floral without being perfumed. What the fermentation adds is acidity and a slight dryness that makes the whole thing feel less like a cordial and more like something approaching a light sparkling wine. At 14 kcal and 2.8g of sugar per 100ml, the numbers are comparable to the rest of the Hip Pop range. Hip Pop market this as their bestseller, which is plausible — the flavour is the most universally accessible of the four, without the heat of the ginger variants or the acidity of the tropical one.
