About This Drink
Pop Cultures' raspberry and ginger pairing is a natural one — the tartness of the berry and the warmth of the ginger both work with, rather than against, the fermentation character of jun. The base is green tea fermented with organic Sussex honey, which gives a lighter, rounder profile than sugar-based kombuchas; the result is less vinegary and more fruit-forward. The raspberry comes from 100% puree rather than flavouring or juice concentrate, which means it reads as proper fruit rather than confected berry. Ginger brings warmth without being a ginger beer — it's a supporting note here, not the lead. The honey character sits underneath, barely perceptible but softening the edges. As with all Pop Cultures products, this is unpasteurised and continues to slowly ferment in the fridge, so carbonation is gentle and natural. Best consumed reasonably promptly once opened. For anyone who finds standard kombucha too aggressively sour, the jun style is worth trying.
