Aegean Sky is the most aperitif-forward expression in the New London Light range, and the most distinctive. Where the Original sits in gin territory, this one goes somewhere quite different: kumquat, blood orange, and bergamot for sharp bitter citrus; olive for an earthy, savoury note that's unusual in an AF spirit; rosehip adding subtle floral complexity; and rosemary tying it together. The production method is the same across the range: botanical steep in neutral grain spirit, vacuum distillation to strip the alcohol while preserving the volatile flavour compounds, then blending with natural flavours and a kombucha stabiliser. The result is a 0% spirit with genuine texture and complexity. The olive note in particular is something you don't get elsewhere, and it's more convincing than novelty. Serve as a spritz: 50ml over plenty of ice, topped with premium tonic, garnished with rosemary and a black olive. It was awarded a 2022 Beverage Testing Institute Gold. Vegan, allergen-free, 70cl.
