About This Drink
Pastore are a Cambridgeshire brewery with a focus on mixed fermentation sours, and Sorbetto is their take on a low-alcohol fruited sour made alongside alcohol-free specialists Mash Gang. The base is fermented with Pastore's own house sour culture before being conditioned on strawberries, cherries and lime — the result is a beer that tastes genuinely fruit-forward rather than flavoured. In the glass it pours a hazy blush-pink with decent carbonation. The flavour follows the aroma closely: strawberry leads, soft and ripe, with cherry adding a bit more depth and lime providing a sharp citrus snap that stops it becoming cloying. The lactic sourness is present throughout but sits neatly in the background — this is not an aggressively sour beer, more a lively, tart one. At 0.5%, the low alcohol level is effectively imperceptible. At around £3.50-3.95 for a 440ml can, Sorbetto sits at the accessible end of the craft AF market. It's widely stocked by independent UK craft beer retailers, though availability can be patchy depending on the season.
