Noughty Rouge is the original dealcoholised Syrah in the range, the foundation on which the newer Monté was built. The grapes come from Darling on South Africa's west coast, where vineyards are farmed dry on wind-cooled slopes, producing concentrated fruit without irrigation. After traditional winemaking, the wine is dealcoholised using gently spun cone technology at low temperature and under vacuum, preserving body, colour and the tannin structure that makes this worth putting in a glass. Pour deep ruby. The nose opens with ripe red fruit and candied cherry, with crushed black pepper and a thread of dried rose petal that gives it a certain old-world character. French Oak integration adds tannin rather than vanilla sweetness, keeping the profile dry and food-friendly. On the palate it is well-balanced, with a 14 kcal per 100ml count that reflects genuine restraint. Organic and vegan. Serve at cellar temperature, 14-16°C, alongside lamb, beef or a mature hard cheese. Under 0.5% ABV.
