About This Drink
Red Clay is Proxies' medium-bodied red wine alternative, built from Pinot Noir grape juice and Niagara verjus, with a cranberry vinegar element that provides the same structural tartness a good red wine gets from fermentation. A complex tea blend of Yunnan black, hibiscus, elderberry, blackcurrant, and butterfly pea flower contributes both colour and tannin-like depth. On the nose, cherry and blackberry lead, with a herbal, earthy note from the burdock root and Citra hops extract adding something more savoury and complex than typical fruit-forward NA options. On the palate, the dark fruit is forward but not jammy, supported by real acidity and a wine tannin addition that gives texture. Fermented ginger adds a quiet warmth that carries through to the finish. Serve at cool room temperature in a red wine glass. Best alongside lighter red meat dishes, mushroom-based meals, charcuterie, and soft washed-rind cheeses.
