Big Red is Proxies' boldest still red, a wine alternative designed for the dinner table. Cascara, black malt, and hibiscus provide tannin-like structure and depth; brandy barrel and black peppercorn aromatics round out the impression of a proper red. On the nose, dark fruit comes forward, blackberry and cherry with a hint of raspberry underneath. A cigar-box earthiness sits behind, along with the faintest suggestion of oak from the brandy barrel extract. On the palate, the cherry and blackberry are generous, with tartaric acid providing genuine backbone. A cayenne and black pepper finish adds warmth and length. The mouthfeel is medium-bodied with a dryness that holds up alongside food. Note: contains gluten (black malt). Serve at cool room temperature in a red wine glass. Pairs well with red meat, aged hard cheese, and slow-cooked dishes.
