About This Drink
Low Intervention Organic White Nº 2 is an alcohol-free white wine from north Alsace, France, made from six hand-picked organic grape varieties: Riesling, Gewürztraminer, Auxerrois, Pinot Blanc, Pinot Gris, and Sylvaner. The grapes grow on mineral-rich soils of granite, limestone, and clay, ripening slowly through long, dry summers before harvest. Grapes are gently pressed, naturally fermented in stainless steel without added yeasts or additives, then aged for twelve months before low-temperature dealcoholisation. The pour is pale gold with green highlights. The nose is aromatic and layered: citrus and orchard fruit upfront, with floral notes from the Gewürztraminer and honey threading through. Cardamom and warm spice emerge as the wine opens. On the palate, the acidity is vibrant and refreshing, balancing the wine's aromatic richness. Sweet fruit and mineral notes sit in the mid-palate, with the finish long and precise. A complex, versatile wine. Good alongside Alsatian-style dishes, soft-rind cheeses, white fish with cream sauces, or Thai food where the aromatic intensity holds its own. Serve at 8-10°C.
