Pomegranate Ginger Tonic is the current iteration of Mockly's ginger and pomegranate mocktail. The defining combination is pomegranate and ginger: the former tart and fruity, the latter sharp and warming. Apple juice concentrate adds sweetness and body, lemon juice keeps the acidity lively, and quinine hydrochloride brings the faint, dry bitterness of classic tonic water. It pours a vivid, clear ruby-red. Pomegranate leads on the nose with ginger following close behind, lemon adding citrus freshness across the whole thing. On the palate it's spicy-sweet, the pomegranate providing the fruit body and the ginger building gradually across the sip. The quinine is light but effective, providing a dry counterpoint that lifts the whole drink. The finish is warm and dry. The tonic base sets this apart from other pomegranate-ginger drinks. It's not as sweet as it looks.
