About This Drink
The Paloma is one of those cocktails that works partly because of what the tequila brings and partly because grapefruit and salt are genuinely good together. Sir James 101 leans into the citrus side of the equation, using blue agave alongside grapefruit to give it botanical structure in the absence of spirit. The nose is clean and citrus-forward, with grapefruit peel and a faint vegetal note from the agave. On the palate you get the grapefruit bitterness early, which is the right call. The sweetness is present but held back enough to let the citrus work. Carbonation is light and even. It sits in the better half of the Sir James 101 range: the grapefruit bitterness gives it a grown-up edge that the sweeter variants lack. Serve cold with a wedge of grapefruit or a pinch of flaky salt on the rim if you want to be true to the cocktail.
