About This Drink
Proxies built this one with The Zero Proof, a US retailer, the inspiration being Georgia peaches grown near the shop. It pours a warm salmon-pink with fine bubbles and the nose is distinctly peachy with raspberry threading behind and a tartness from the verjus that keeps it from smelling like cordial. In the glass it's light and fresh. Peach sits at the front, raspberry comes through the middle, and a zesty citrus note lifts the finish. Quassia bark adds a trace of dryness that does real structural work; without it, the whole thing would tip into fruit juice territory. The combination reads as a proper sparkling drink rather than a soft option. Serve cold in a flute or coupe. It works in any setting where sparkling wine would feel at home.
