Strawberry gum is a eucalyptus native to the Blue Mountains with a scent that's genuinely uncanny - ripe strawberry and candy, intensely aromatic, nothing like the fruit itself. As a brewing botanical it's unusual and Sobah uses it to striking effect here. The pour is pale straw. The aroma hits immediately: strawberry bubblegum, warm and sweet, with citrus blossom and a floral lift underneath. The palate is more restrained than the nose suggests. There's a clean extra pale ale base that keeps the botanical character at the front without pushing into sweetness, and a gentle bitterness on the finish keeps it balanced. It's a seasonal release, so availability varies. Vegan and chemical-free.
