Wattleseed has been ground and eaten by Aboriginal peoples for over 40,000 years. Roasted, it takes on a complex, savoury quality - somewhere between coffee, hazelnut and cocoa. Sobah uses it as the defining botanical in this gluten-free golden ale, brewed on a sorghum base rather than barley. It pours warm amber gold with a cream head. The nose is immediately distinctive: roasted and nutty, with background raisins and a gentle sweet spice. On the palate the same roasted nuttiness comes through, softened by a smooth, rounded body. There are hints of dark chocolate and dried fruit. Bitterness is low. The finish is clean and earthy, with the roasted character lingering rather than a hop bite.
