Jukes Sparkling Pinot Noir occupies genuinely novel territory in the alcohol-free category. It is not a de-alcoholised wine and it contains no actual grape juice. Instead, Matthew Jukes applies the same vinegar maceration method behind the Cordialities range to English Pinot Noir grape skins sourced from one of England's more serious wineries. The skins arrive after pressing, heading for the compost otherwise, and are steeped in organic apple cider vinegar to draw out colour, aroma and flavour compounds without any fermentation at all. The result is a pale pink that lands convincingly close to a rosé sparkling wine. The nose carries the varietal character: red cherry and a faint raspberry, with a wisp of something savoury underneath. On the palate it stays dry throughout, the apple cider vinegar giving it spine rather than sharpness. Carbonation is active and energetic, keeping the wine-like fruit character feeling fresh rather than heavy. The finish is long and clean. At 7 calories per 100ml it is genuinely low calorie, and the ingredients list is short: carbonated water, organic apple cider vinegar, Pinot Noir grapes, brown sugar. Nothing artificial.
