New London Light Aegean Sky is the Mediterranean-botanical expression in the New London Light range, made by Salcombe Distilling Co. at their Devon distillery. Like other expressions in the range, it is distilled in a rotary vacuum still and stabilised with kombucha. The botanical selection draws on kumquat, blood orange, bergamot, and olive, alongside rosehip and rosemary. It is positioned as a non-alcoholic aperitif within a range that shares its production method and kombucha-stabilised format across all variants.
