About This Drink
Oddbird Blanc de Blancs is an alcohol-free sparkling white wine made from Chardonnay grapes in the Languedoc-Roussillon region of southern France, where the terroir is light, stony clay and limestone. The grapes undergo slow cold fermentation and then 12 months of traditional ageing before the alcohol is removed using a low-temperature, aroma-preserving method (de-alcoholisation, meaning the wine is produced at full strength and the alcohol then extracted at low temperature to protect the aromas). The wine is pale gold with fine bubbles, with aromas of green apple, pear, citrus, white flowers and toasted bread. On the palate it is dry and clean, with gentle acidity, subtle sweetness, and flavours of apple, lemon peel, lime, honey and almond, plus light pear and stone fruit. It pairs well in a flute glass with seafood or canapés.
