Kaineken Tikker is the gooseberry-forward expression in Ollenaut's Kaineken non-alcoholic series, distinguishable from the IPA and stout siblings by its fruit character. The brewing process uses a cold-mashing technique to limit the extraction of fermentable sugars while preserving body, and natural gooseberry puree is added during conditioning to retain fresh fruit aromatics. The brand describes the character as a sour-sweet balance intended to evoke northern European berries. Like all Kaineken beers, Tikker is fermented at minimal alcohol using a specialised yeast rather than being dealcoholised after the fact.
