
Wiper and True
Wiper and True is a Bristol-founded independent brewery producing both alcoholic and alcohol-free craft beer, established in 2012 by Michael Wiper. The brewery began as a nomadic operation, renting kit from other brewers across the country before eventually settling into a permanent home. In 2022, Wiper and True opened a substantial new headquarters and taproom in Bristol's Old Market neighbourhood, the same year the brand launched its first alcohol-free beer.
The alcohol-free range has grown to include lagers, pale ales, and a milk stout variant, giving sober-curious drinkers a craft-brewery range that extends beyond the standard AF lager. The milk stout variant in particular reflects the brewery's willingness to bring more technically demanding styles into its AF lineup. Rather than brewing to a low-alcohol target from the outset, Wiper and True invested in a dedicated dealcoholisation plant at the Old Market site. Dealcoholisation means the beer is brewed at full strength before the alcohol is gently removed, a process the brewery documents openly and that reflects a deliberate commitment to preserving the flavour complexity Wiper and True is known for across its wider range.
Sustainability is built into the brewery's infrastructure: a CO2 recovery system captures carbon dioxide produced during fermentation and reuses it for carbonation, reducing the brewery's reliance on externally sourced gas.
Wiper and True's alcohol-free beers sit in the premium bracket and are available through specialist alcohol-free retailers as well as direct from the brewery. Distribution remains specialist-focused rather than mainstream, which positions the brand firmly in independent craft territory.
