Not Guilty

The wines are made by winemaker Jamie Saint from grapes grown in Southeastern Australia, including Syrah and Shiraz varieties. After harvest, grapes are crushed and de-stemmed before fermentation at between 18 and 22 degrees Celsius for five to seven days. Alcohol is then removed using the spinning cone column method, a process in which wine passes through rotating cones under reduced pressure, separating the alcohol from the wine's volatile aroma compounds at low temperatures so those compounds can be recaptured and returned to the finished product. The winemaking also draws on flash détente, electrodialysis, and oak fermentation.

The range is built around full-flavoured profiles, spanning whites, reds, and rosés, including sparkling styles with a light effervescence. Packaging across the range is fully recyclable.

Not Guilty is aimed at millennials and Gen Z shoppers and sits in the value segment of the alcohol-free wine category. Two of its drinks have picked up awards. The brand is owned and manufactured by Australian Vintage Ltd, with UK distribution handled through Australian Vintage (UK) Ltd.
