Zeronimo

Zehetbauer launched Zeronimo after finding that existing alcohol-free wines lacked the structural complexity he wanted as a wine enthusiast. Rather than treating dealcoholisation as a finishing step, Zeronimo builds structure and depth into the base wine first: every wine is matured in wooden barrels before the alcohol is removed. This approach is documented on the brand's own production pages as foundational to the quality of the finished product.

The barrel maturation varies by release. The Leonis Blend spends 12 months in French oak before dealcoholisation. The Century Blend is a limited release sourced from vines over 100 years old, an unusual provenance for the AF wine category that prioritises fruit quality from the outset.

Dealcoholisation uses vacuum distillation at approximately 30°C. Vacuum distillation works by reducing air pressure inside the vessel, which lowers the boiling point of alcohol so it can be separated from the wine at temperatures well below what conventional heating would require. This protects the volatile aromatics that higher-heat processes typically destroy, and Zeronimo identifies it as the gentlest method available.

The range draws on distinctly Austrian viticulture, with varietal wines including Grüner Veltliner and Zweigelt alongside blended wines and sparkling options. Zeronimo also produces a line of concentrated wine-based tonics designed for mixing or solo drinking, extending the brand's offer beyond the wine-substitute format into bar use.

Zeronimo targets sober-curious drinkers who approach an AF bottle with the same expectations they would bring to a conventional wine: oak influence, varietal character, and structural complexity. Distribution runs through specialist alcohol-free retailers, consistent with its positioning at the luxury end of the AF wine market.
