Omnipollo's Believe is the brewery's take on the West Coast IPA format, which suits the alcohol-free brief more naturally than New England-style hazies. West Coast IPAs are built on clarity, dryness, and hop bitterness rather than soft body and tropical sweetness, and those qualities translate better to 0.5% production. The pour is clear pale gold. The dry hop brings piney bitterness and bright citrus to the nose — grapefruit peel, some lemon, and the resinous quality that defines the style at its best. On the palate, the caramel malt base provides structure without sweetness dominating, and the bitterness is present and genuine. Nothing about it is shy or apologetic. The finish is dry, lingering with citrus peel and a faint pine note. Brewed at Omnipollos kyrka in Sundbyberg, Sweden, Believe sits alongside Fortuna in Omnipollo's AF beer lineup. The two cover different ends of the West Coast spectrum — Believe coming in with more assertive, resinous character.
