About This Drink
Roots Divino Bianco is made in Greece using native Aegean ingredients, and it positions itself squarely as a wine-based aperitif rather than a botanical spirit. The base is a non-alcoholic fermented grape concentrate, which gives it a body and weight that purely botanical AF aperitifs often miss. Rosemary, thyme, lemon, wormwood, and gentian are macerated into that base to build the vermouth character. The result is fresh and slightly tart, with rosemary and lemon dominant and the wormwood providing a clean, dry bitterness. It's noticeably lighter and more citrus-forward than a conventional bianco vermouth, which makes it a good spritz base: pour over ice, add tonic, garnish with olives or a lemon slice. The sweetness is moderate at 13g sugar per 100ml. Multiple gold awards, including Best in Show at WSWA Las Vegas 2024, and it's served at venues including Eleven Madison Park and Death & Co.
