About This Drink

JIN JIN is not a drink you pour and sip straight. It's a concentrate — 20ml in a glass topped up with water — made by fermenting over 35 fruits, vegetables, mushrooms and legumes together for more than six months. The process uses acetic bacteria, Lactobacillus Plantarum and wild yeast, which is more akin to a craft vinegar or shrub tradition than anything you'd find in the spirits aisle. The flavour lands somewhere between a drinking vinegar and a sweet-and-sour cordial. There's fruity sweetness from pineapple and goji berry, a tart lactic edge, and a slightly earthy, mushroom-derived depth underneath. It's polarising — if you're not used to fermented cordials, the sourness takes some adjustment. Persevere and there's genuine complexity here. It's sold primarily through specialist AF retailers and wellness-focused shops. Vegan and gluten free, with no artificial additives. The 750ml bottle makes around 37 drinks, which makes it decent value once you're past the initial sticker price.
