About This Drink
Midnight Sun is the most adventurous thing in the New London Light range. Where the Original channels classic gin botanicals and Aegean Sky goes Mediterranean, this one heads somewhere genuinely unusual: the Nordic coast. Seaberries and lingonberries provide the berry backbone, elderberries add depth and a soft tartness, samphire and kelp bring saline coastal character, Icelandic moss lends earthy herbaceous weight, and pine resin threads through everything with a cool, resinous note. Alexanders — a wild coastal herb related to celery — rounds it out. It's an unusual combination that works better than it has any right to. The production process is the same across the New London Light range: botanicals are steeped in neutral grain spirit and distilled in a rotary vacuum still at low temperature, which strips the alcohol without losing the volatile flavour compounds. The concentrated distillate is blended with natural flavours and stabilised with kombucha. The result is a 0% spirit with genuine texture — the xanthan gum helps too, giving it more body than most AF spirits manage. At 70cl and around £26, it sits at the same price point as the rest of the range. Serve long over ice with tonic, a sprig of fresh mint, and a raspberry. It was awarded a 2022 Beverage Testing Institute Gold. Vegan and allergen-free.

Acids: tartaric acid, malic acid. Acidity regulator: sodium citrate. Preservatives: potassium sorbate, sodium benzoate. Thickener: xanthan gum.
