About This Drink
GSM is an alcohol-free red wine from Saint-Chinian in the South of France, blended from Grenache, Syrah, Mourvèdre, and Carignan. The vineyard sits on schist slopes and limestone plateaus where Mediterranean heat meets cooling winds from the Massif Central, building concentration in grapes with deep roots. Many of the Carignan vines are over a century old. After destemming, the grapes are fermented in raw concrete tanks with light pump-overs, followed by full malolactic fermentation. The wine matures for twelve months on fine lees before dealcoholisation at low temperature. The pour is a deep ruby with purple hints. The nose is complex and earthy: red berries, blackberry, and mineral notes up front, with heather and garrigue herbs following. On the palate, the entry is sharp and tannic, giving way to darker fruit and spice in the mid-palate. There is structure and grip here, but also a roundness from the Grenache, which softens the overall feel. The finish is dry, earthy, and pleasantly long. A serious red that works at the table. Good alongside lamb, herb-crusted pork, grilled mushrooms, or firm hard cheeses. Serve at 16-18°C; decanting briefly will open up the fruit.
