Midnight Sun is one of three expressions in the New London Light range, alongside the Original and Aegean Sky variants. Made by Salcombe Distilling Co. in Devon, it is a 0.0% spirit produced in a rotary vacuum still to preserve botanical character. The botanical bill spans eight ingredients, including coastal and foraged elements: seaberries, samphire, kelp, Icelandic moss, and pine resin alongside elderberries, lingonberries, and alexanders. After distillation, the spirit is stabilised using kombucha and carries no allergens.
