About This Drink

Blanc Slate is Proxies' everyday white, a wine alternative built on a foundation of Sauvignon Blanc grape juice and Niagara verjus. It pours a pale gold with no carbonation, looking and behaving like a glass of white wine. Zesty citrus opens on the nose, kiwi and apricot alongside, with fermented lemongrass adding an aromatic, herbaceous layer that is distinctive and genuinely interesting. On the palate, stone fruit and citrus carry through with good acidity from the verjus and grapefruit. White peony tea adds a gentle floral note. A galangal, makrut lime, and habanero aromatic blend provides the finish: warm, slightly spicy, and more complex than expected. Serve chilled in a white wine glass. One of the most versatile Proxies for food pairing, working well with seafood, soft cheeses, Thai and spiced dishes, and light pasta.
