Red Ember is where Proxies goes fullest into red wine territory. The base is unfermented Cabernet Sauvignon grape must blended with dark fruit juices, black tea, and a spice mix that includes black pepper and cayenne. It's not dealcoholised wine: it's a blend built to approximate the experience of a bold red, and it leans hard into that brief. On the palate, plum and blackberry sit up front, followed by a warming spice note that builds through the mid-palate. Black tea provides some of the tannin-like structure, and the finish has a dry, slightly smoky quality with coffee and cigar box notes in the background. The acidity is good and the bitterness is real rather than just implied. It won't fool a wine expert at a blind tasting, but it's a genuinely satisfying pour for someone who wants something complex and red in the glass. Goes well with the same food a bold red would: grilled meat, aged cheese, stews.
