Herbarium was founded by Steve and Andrew, who hand-distil small batches of botanicals through traditional copper pot stills at their UK facility. Distillation 8 is the floral, lighter-character expression: lavender, rosemary, lemongrass, and a flicker of pink pepper are distilled without alcohol, sugar, sweeteners, or colourants. The number refers to their recipe, not an ingredient count. The resulting liquid has genuine botanical presence — rosemary and lavender sit clearly in the nose, the lemongrass keeps things from going soapy, and the pink pepper adds a faint warmth on the finish. It's built to pair with tonic water as a gin substitute, and it works in that context.
