The alcohol-free Dr. Zenzen label draws on that heritage, applying a distillation-based dealcoholisation method in which the base wine's volatile aromatic compounds are captured separately before alcohol is removed and then reintroduced afterwards. This process is designed to preserve the aromatic character of the Pinot Grigio through dealcoholisation.
