The production method involves a two-step fermentation followed by pasteurisation, and each product comes in below 0.5% ABV as a result. The kombucha naturally produces acetic, gluconic and lactic acids alongside polyphenol antioxidants and L-theanine. Certain variants in the range also add XOS fibre (xylo-oligosaccharides) for a prebiotic benefit.
